Lemon Yogurt Cup Cakes


Initially my plan is to bake a yogurt cake rather than cup cakes, but something went wrong on the batter. So, I changed my plan to bake cup cakes instead. Luckily it turned out fine! The result is fragrant and springy cupcakes...and delicious too :)

Ingredients:

180 flour, sifted
1tsp baking powder
200gm plain yogurt
120gm egg
120gm fine sugar
50gm sunflower oil
zest of 1 medium-size lemon
juice of 1 medium-size lemon
1tsp vanilla essence



Method:

1. Preheat oven to 190 degrees C. Paper line the cup cake tin.

2. In a large bowl, combine yogurt, sugar, vanilla essence, lemon zest, lemon juice and egg. Beat lightly.

3. Mix it with flour and baking powder. Pour in the oil to mix well.

4. Fill muffin cups. Bake at 190 degrees C for 25 minutes.

5. Take out the muffin and leave it cool before serving.

Housed in Parkson Ria Sungai Petani, Xiang Ling Coffee house is a family-friendly place to dine in. It has garnered many customer from the shoppers and workers in the shopping complex. Xiang Ling has a wide varieties of vegetarian food ranging from economy rice, noodles, burger, sushi to Tai Chow. For the economy rice, you can choose white rice, brown rice, pumpkin rice and tomato rice to go with their ready made vegetarian dishes.

Vegetarian Clay Pot Noodles @ RM3.80

The clay pot noodles isn't bad. There is room for improvement for the deep-fried yee foo noodles. They have to think of a better cooking method, so that the noodles is not so chewy, but springy..

Thai Curry Fish Rice @ RM4.80

Thai curry rice set is quite flavorful and the vegetarian fish fillet serving is generous. ( 4 pieces in total) .The curry rice is served with salad in sweet and sour sauce with pineapple, cucumber and tomato. If you don't like strong curry powder taste, you are advised not to order this dish.

Vegetarian Ham Burger RM3.50

Does it look like vegetarian burger? It has vegetarian meat patty, lettuce and a piece of cheese. It's smaller in size compared to Mc D's burger. Taste wise, it's just ok.

Strawberry Muffin 草莓玛芬



Last Sunday was very hot, we canceled our plan to go out and decided to stay at home. I utilized my time to do some baking. Hence, here's my first batch of muffin baking hot from the oven.

炎热的星期天下午,心情显得闷闷地。我俩打消了外出的念头。难得闲在家里正好利用空档时间来烘焙。 来,看看我新鲜出炉的小松糕。

I just recalled that it's been years that I didn't bake muffins. That was since my last cooking class in secondary school. But, I can still remember baking muffin is much more easier that baking a cake.

我还记得这我中学毕业以来的第一次烘制小玛芬。印象中,烘烤玛玢可比烘烤蛋糕来得容易。

StrawberryMuffin草莓玛芬
Ingredients:

1 3/4 cups self raising flour
1 Omega-3 egg
1 tsp baking powder
slightly less than 1/2 cup white fine sugar
1/2 cup milk
1/2 tsp salt
1/4 cup melted butter
3 tbsp of home made strawberry jam

Method:

1. Preheat oven to 190 degrees C. Paper line the muffin tin.

2. In a small bowl, combine butter, milk, and egg. Beat lightly. In a large bowl, mix flour, salt, baking powder and sugar.Add the strawberry jam. Pour in milk mixture and stir together.

3. Fill muffin cups. Bake at 190 degrees C for 25 minutes.

4. Take out the muffin and leave it cool before serving.

Stir-Fried Longevity Noodles 炒寿面


Longevity noodles is made of salted dough which is in long and continuous form. That's the reason it symbolizes long life in Chinese culture. Chinese consider it as an auspicious food to serve in one's birthday and during the Chinese New Year.


Now a days, the domestic helper at in law's house can fry quite tasty longevity noodles. The "Kiasu" in me  tells myself to try cook it at home. Now, I'm proud to to say that I do better than her, even on the first trial. :P
See, how Kiasu I am.

It's not difficult to prepare a home cooked longevity noodles. You can adapt it the way you fancy. For me, I prefer to fry the noodles rather than cook it in soup. Also, I think without chives the stir-fried longevity is not complete, so a handful of chives is added as the last cooking step.

Complementing the longevity noodles are roasted pork, scrambled egg, prawns, dried mushroom, and chives. The noodles is in perfect level of springiness. Here, I present to you my Stir-Fried Longevity Noodles. I'm sharing my oriental longevity noodles with Presto Pasta Night #147 founded by Ruth and hosted by Sara. Enjoy!

Stir-Fried Longevity Noodles 炒寿面
Serves 2

Ingredients:

Longevity noodles, portion for 2
few stalk of chives, cut into 2" length
2 dried mushrooms, soaked, stalk removed and thinly sliced
8 medium-sized prawns, shelled and deveined
some roast pork, sliced
2 omega-3 eggs
3 cloves of garlic, finely chopped
cooking oil

Seasoning:

1tbsp of oyster sauce
1tsp of brown sugar
1tsp of dark soy sauce
1tbsp of light soy sauce
dash of pepper
1tbsp of water

Method:

1. In a pot of boiling water, cook the longevity noodles as per the instruction on package. Drain and set aside.

2. Heat some oil in a wok, scramble the eggs and set aside.

3. Heat enough oil in the same wok, saute the garlic. Add the roast pork and mushroom to stir fry till fragrant. Then add the prawns to stir fry together.

4. Pour in the longevity noodles and the seasoning sauce. Stir fry till noodles is coated with the sauce. Add the chives and stir fry for a while before done.

Boston Hongkie Kopitiam is located in Autocity, opposite of Swensen's. It is one of the few food outlets that we haven't tried before. So, this time we decided to give it a try. While awaiting for our food to be served, hubby took some photos on the restaurant's interior decor.




Red Bean Cendol @ RM4.95 and Ice Honey Lemon @ RM5.95

Red Bean Cendol is recommended as per the menu, but it tastes so so only. Instead of the original coconut milk, the drink is modified with soy bean milk. Honestly, soy bean milk does not bring out the taste. It's far behind the traditional cendol.


House Noodles 又一城车仔面 @ RM9.95

Chinese noodles served with radish, pineapple cubes, sliced chicken, deep-fried bean curd, in their spicy House sauce. This noodles was not a bad choice. I quite like the taste. Thumbs up for their spicy sauce, which made the noodles more flavorful. Recommended!


Hot Nasi Lemak with Fried Chicken Drumstick @RM13.95

The nasi lemak was another disappoinment. The rice serving is very small and with very little coconut fragrance. The chicken thigh was over-fried too. No oumpphh! Perhaps we should have ordered other food instead.

Roast Chicken Thigh With Herbs



Ever since I prepared roast chicken for our New Year's dinner, hubby is kept on pestering me for more. Luckily getting the oven to perform the roasting process is super easy, I decided to pamper him with another round. :) This time is herbs flavored roast chicken, served with roast potato, carrot and blanched broccoli, I'm done with the dinner. :)



The method is almost the same as the previous recipe, just with different ingredients. The chicken thigh is marinated with grated garlic, salt, soy sauce, oyster sauce, black pepper powder, honey and generous amount of mixed herbs. It was marinated for overnight.

The next day, the marinated chicken was roasted in the preheated oven at 220 deg C for 20 minutes. While doing this, I peeled and cut the potato, carrot and floreted the broccoli. Half boiled the potato and carrot, set aside. Blanched the broccoli and set aside. After 20 minutes, add in the potato and carrot to the chicken, sprinkle olive oil and mixed herds over it. Continue to roast the chicken for another 30 minutes. Does it sound simple?

A couple of weeks ago, we visited a friend who stays in Farlim. He gave us a treat at Pizza Station in old Sunshine Farlim. Thanks CK!

Because of him, we got a chance to try something new. Also, we got an opportunity to observe the pizza making process. As you can see, the boss is a bit shy to let us shoot his photos. Hehehe...


Twisty Garlic Bread @ RM3.80

We ordered the garlic bread without the wild mushroom soup, a wrong decision. A good mushroom soup is a complement to good garlic bread. So, my advice is to order both. :)
For the pizzas, we opted for 2 regular supreme "thin & crispy" crust at RM30 (for two).


Italiano Regular Pizza

The Italiano pizza with chicken ham, pepperoni, mushroom, onion, green capsicum and top with mozzarella cheese.


BBQ Meat Galore Regular Pizza

BBQ Meat Galore with chicken sausage, ham, chunky chicken, tangy BBQ sauce, lemon mayo & Mozzarella cheese.
Overall it was a satisfying meal. The pizza and garlic bread was nice hot from the oven. :)

Mango Yogurt Cake (Baked in Rice Cooker) 电饭锅做蛋糕


After the several successes of cake baking in the rice cooker, I endeavored to try a new flavour. It's my own mix and match kind of experimental recipe. I'm proud to say that it turns out yummy! :)

Initially after baking, the cake was a bit dry. Surprisingly within a night, it transformed into moist, fragrant and soft cake. It's unbelievable! Anyone knows the theory behind? Please share with me.

Mango Yogurt Cake

260gm of mango yogurt
120 gm of Caster sugar
4 eggs (Grade B) at room temperature
50gm of sunflower oil
200gm of self-raising flour
1 tsp of baking powder

Method:

1. Beat the eggs and Caster sugar under high speed until fluffy. (I beat it for about 15 minutes)

2. Pour in the yogurt and mix well.

3. Gently fold in the sifted flour and baking powder with plastic spatula.

4. Lastly, add the sunflower oil and mix well with spatula.

5. Using spatula, transfer the batter into inner pot of rice cooker. Give the pot a few good shake to remove the air trapped in the batter.

6. Bake the cake using "quick cook" menu.

7. When it's done, leave it cool. Upside turn the pot to leave the cake bottom-up on a big plate.

Papaya Salad (Kerabu Betik)

It's my first time making a kerabu dish. I'm using the raw papaya freshly plucked from in law's back yard to make this papaya salad. The process is really simple and the outcome is quite impressive. The combination of sweet, sour and spicy online will get you excited. It's a good appetiser to kick start a meal.

Papaya Salad

Ingredients:

1/4 of unripe papaya, peeled, seeded and shredded
1 bunga kantan, finely chopped
handful of mint leaves, coarsely chopped
some bird's eye chilies, chopped
5 kalamansi, juiced (adjust to your own liking)
pinch of salt
brown sugar to taste

Method:
Mix all the ingredients and keep it cool in fridge before serving.

Salted Egg Yolk Crab RM29

Two mud crabs weighed 650gm were deep-fried till perfection and then sauteed with salted duck egg yolk sauce. The simple ingredients were just nice to impart its flavor. Definitely mouth watering :)


Groupa in clay pot RM45

Every time when we visit this place, we'll never forget to order this dish, Groupa with their special sauce cooked in clay pot and garnished with parsley. The fish is fresh and meat is tender. Another recommended dish!


Tiger Prawns in Spicy and Sourish Sauce RM30

2 tiger prawns weighed 200gm is a bit expensive at RM30. Each of us just got to savor only half of a prawn. But, I would like to give this dish a thumbs up as the prawns are fresh and succulent. The gravy is a real appetite booster.


Stir Fried Emperor Noodles (serves 4) RM15

We opted for fried emperor noodles instead of rice. The noodles is springy and fragrant. So far, this is the most flavorful emperor noodles that I've tasted. :)


Seaweed tofu with mushrooms RM15

Their signature tofu is one of a must dish. Their home made tofu is smooth and silky, viola!

The food here is not bad if you order the right dishes and if the seafood is fresh....the only thing is that it was quite pricey....total damages for the above dinner RM140.40 for 4 person. :P

Roast Chicken Thigh Platter

Happy New Year to all my readers! Here's what I prepared for our new year eve dinner. We had flavorful "Roastie Platter"and sparkling juice. Cheers! The chicken thigh was roasted to perfection together with pork sausage, potatoes, onions and white button mushroom. Simple yet delicious!

Roast Chicken Thigh Platter



Ingredients:

2 chicken thighs, fat discarded
2 BBQ pork sausages
2 big potatoes, peeled and cut into bite-sized
5 big fresh button mushrooms, cleaned and sliced
half of yellow onion, peeled and sliced
2 tbsp of olive oil
1 tomato, sliced
some green and red corals

Chicken Rub:

3/4 tsp of sea salt
5 cloves of garlic, grated
1 tsp of brown sugar
dash of black pepper powder
1/2 lemon, juiced

Method:

1. Mix all the ingredients and seasoning for the chicken rub. Rub it over the chicken thighs, and marinate it for at least 4 hours.

2. Arrange the potatoes and onion at the bottom of roast pan. Sprinkle 2 tbsp of olive oil over it. Put the chicken thighs on top and roast it at 200 degree Celsius for 50 minutes or until the chicken is slightly brown.

3. Add the button mushrooms and sausages. Roast for the last 10 minutes.

4. Serve the chicken with potato, pork sausage, button mushroom, corals and tomato slices.
