Steamed Eggplant With Dried Shrimp Sauce


I didn't really plan on how to cook the eggplant which was stored in the fridge for the last few days. Then suddenly an idea came across my mind to cook it in this way....by steaming it. Yup, that's right. Steaming it retains it's original texture and color, and with a touch of homemade sauce, you'll have a healthy veg dish to go along with rice. Can you see the nice original purple color of the eggplant? I just love it!

Steamed Eggplant With Dried Shrimp Sauce

Ingredients:
1 eggplant, cut into 1.5cm x 8cm strips and soaked in salt water
2 tbsp of dried shrimps, soaked and drained
4 cloves of garlic, peeled and chopped
1 1/2 tbsp of oyster sauce
1 1/2 tbsp of light soy sauce
1 tsp of dark soy sauce
dash of pepper
75ml of water
1 1/2 tbsp of corn flour mixed with 4 tbsp of water
1 tbsp of vegetable oil

Steps:
1. Drain the eggplant strips and arrange it on a heat proved plate. Steam it over high flame for 5-6 minutes.

2. Heat up oil in another wok. Saute garlic till fragrant. Add dried shrimps and fry it for few minutes. Stir in the sauce and bring to a boil. Add corn starch mixture until the sauce is thickening.

3. Pour the sauce over the steamed eggplant. Serve hot with rice.

  7. The eggplants looked so purple, so raw. But I like them cooked in any ways. But sometimes, there is a stinging sensation after eating them, which might put some off.

    J2Kfm, the eggplant is actually cooked, not raw. The steaming process retain its purple color.

  15. Oh! I have to try to cook eggplants this way...steaming it, it is much healthier since eggplants tend to absorb so much oil...and perfect with shrimp sauce on it :-)

  19. cariso, yes. Its flesh is soft and moist while the outer skin remains the nice purple color.
