Deep Fried Arrowhead Chips


Once a year when Chinese New Year is around the corner, you'll find the water chestnut "look-alike" vegetable in most of hypermarkets. It is known as arrowhead or ngaku. I've been eating deep-fried arrowhead since the past 2 years during the Chinese New Year. However, I have not hands on to make this snack. This year father in law bought few bags of arrowhead from Hypermarket. We made our arrowhead chips with the help of domestic helper.

First, the arrowheads are cleaned and skinned. Pat it dry. Then heat up a wok of oil. By using a slicer, the arrowheads are thinly sliced and go straight into the wok for deep-frying. Continue to stir the arrowhead while frying until it turned golden yellow. Remove it from the wok and leave it on kitchen tower. Leave it cooled before storing in an air-tight container.We didn't add any seasonings to the chips as it contains the perfect combination of natural sweetness and saltiness.

  5. one of my fav snacks for CNY...cant stop eating them....haha...some are selling at RM18/tin...super expensive, coz they said preparation r tedious!

  9. I first ate these chips when I worked in KL. You're right, they are very addictive. Your chips look so perfect! Thinly sliced and beautifully deep-fried!!

  11. J2Kfm, the demand is there cuz most people prefer to buy the ready made ngaku chips than making it on their own.

    tigerfish, I just got to know about ngaku since last 2 years when I saw lots of people buying it from hypermarket. Yes, you are right, auspicious chips, what a beautiful name. :)

    fongpc, in fact, it is better in crunchiness compared to prawn cracker, right?

    SimpleGirl, correct. The making process is quite tedious. Also, the producer and distributor need to earn some profit from there too.

  17. It's "healthy" addictive except it is being deep fried. Ya, I can eat the whole container of the ngaku chips without even realising...yummy..yummy!!

    noobcook, I use the slicer to slice it, not difficult to do so.

    Carolyn Jung, this type of chips are getting popular since last 2 years. It's a good snack for CNY gathering.
