2nd Baking: Butter Cake



It's not that I never bake a cake before. Just that I never found a recipe that is just nice for a butter cake that it supposed to be. Sometimes, the cake is too dry and sometimes it is too sweet.

So, to be at the safe side, I served the net for a "guaranteed" recipe. I found this appeared as the first searched result. It's 5x mom's recipe. It's simple to follow and I feel more secure by just follow her's. Anyway, I substituted some of the ingredients with what I had in the fridge, and I reduced the sugar portion by 30gm.

The cake turned out just nice. It's soft, fluffy, not too sweet and not too dry. Anyway, I just need to improve my skill in cake cutting. I spoil the cake, opsss...... Also, I shall wait the cake to cool before cutting, which I failed to do so. I was eager to see its texture. So, you can see I have two pieces of ugly cakes below. I didn't care that much, and so do him (hubby) and him (Tiger). Both of them keep on asking for more. So, in just less than 15 minutes, we ate up almost half of the cake. So "laku".



Butter Cake

Ingredients:

250gm butter
200gm Castor sugar
250gm self raising flour
4 omega-3 eggs
1/2 tsp soda bicarbonate
1/2 tsp orange essence (added to eggs)
1 tbsp of condense milk diluted in 6 tbsp hot water

Method:

1. Preheat oven to 180°C. Grease the sides and base.

2. Beat butter & sugar until light and fluffy.

3. Add eggs one at a time beating well after addition.

4. Fold in the sifted flour and baking soda to mix.

5. Pour in milk and stir to mix.

6. Bake in the preheat oven for 45 minutes.

I tend to have the same problem as you..sometimes too sweet or dry.

New kid, when I substitute 250gm of butter with margarine, the cake will turn out dry too. I do not know about the reason too.

From your recipe, doesn't it taste sweet too? ^-^ I have quite similar recipe as you but without the milk and essence. I found a bit sweet too. lol So i use brown sugar instead of white sugar. Not sure why, but my neighbour kids and my gal love the butter cake with brown sugar than the white sugar. lol

This is really is a coincidence! Seems like both of us had found us a butter cake recipe to keep. :)

Yes still the same. I try deduct some but the kids find that not so nice. SO I maintain 200gm. Hope you like it.

I tried to do this cake. It turned out very soft and delicious. But the next day it became a little hard. I donno why.
