Ma Po Tofu

There are too many recipes for ma po tofu. All are using different kind of ingredients. I’m so frustrated getting to know some of the unknown ingredients. So, ended up with my own recipe discovered. Found it's quite tasty.

Ingredients:

4 cloves of garlic, chopped
1 piece of soft bean curd (300g), cut into small cubes
4 dried Chinese mushroom, soak in hot water to soften. Get it shredded, and cut into small pieces
100g minced meat (chicken or pork), marinated with 1/2 tbsp of light soy sauce, and 1/2 tbsp of sesame oil
200ml of water
2 tbsp of sunflower oil

Seasoning:

2 tbsp of sesame oil
1 tbsp of oyster sauce
1 tbsp of chili paste
1 tbsp of tomato sauce, and
1 tbsp of soya bean paste

Thickening:

1 tbsp of corn flour & 2 tbsp of water (mixed up)

Garnishing:

Chopped spring onions
1 red chili, cut into strip form , and cubed.

Methods:

1. Heat oil in the wok, fry the chopped garlic till fragrant.

2. Fry mushroom and marinated meat for 3 minutes.

3. Add seasoning and fry for another 1 minute.

4. Add in the bean curd, stir fry to combine and pour in water. Bring to boil slowly, simmer for 3 minutes, and add thickening.

5. Add chili just before dish out. Dish out and garnish with chopped spring onions.
